I just baked off some scones from Kay’s recipe box. Kay was my mother-in-law, but I grew to consider her one of my closest friends. I miss her very much. She was one of a kind, selfless, and giving. Whenever our family needed help, she would always be there to initiate unpacking in a new home or watch the kids when we had to be somewhere. She was independent and reliable, and I could count on her for good advice. I just wish that we had the chance to spend more time with her; to do for her what she did for us. She passed away too soon.
Kay would always have something homemade for breakfast. This recipe is easy to make, so you won’t be spending a lot of time in the kitchen. They are a delicious snack and great to give as a gift. Don’t be afraid to substitute different ingredients for the chocolate, try raisins or chopped-up ham and cheese.
-2 cups of all-purpose flour
-1 1/2 teaspoons sugar
-1/2 teaspoon baking soda
-1/4 teaspoon salt
-1/4 cup cold, unsalted butter cut into small pieces
-3/4 cup chilled buttermilk
-1/2 semi-sweet chocolate chips
Preheat the oven to 400 degrees. Have a non-greased baking sheet ready. Sift the flour with the sugar, baking soda and salt into a bowl. Rub in the butter until the mixture resembles a coarse meal. Add the chocolate chips and toss to mix. Pour in the buttermilk all at once and stir with a wooden spoon until all the ingredients are moistened and a dough forms.
On a floured board, pat the dough into a circle that is 3/4 inch thick. Cut into 2-inch shapes with a biscuit cutter and place on a baking sheet. Re-roll leftover dough and cut with a biscuit cutter. Bake until well-risen and golden, about 13 minutes.
