
Kay would always have something homemade for breakfast. This recipe is easy to make, so you won’t be spending a lot of time in the kitchen. They are a delicious snack and great to give as a gift. Don’t be afraid to substitute different ingredients for the chocolate, try raisins or chopped up ham and cheese.
KAY’S SCONES
Ingredients:
-2 cups of all-purpose flour
-1 1/2 teaspoons sugar
-1/2 teaspoon baking soda
-1/4 teaspoon salt
-1/4 cup cold, unsalted butter cut into small pieces
-3/4 cup chilled buttermilk
-1/2 semi-sweet chocolate chips
Directions:
Preheat the oven to 400 degrees. Have an non-greased baking sheet ready. Sift the flour with the sugar, baking soda and salt into a bowl. Rub in the butter until the mixture resembles a coarse meal. Add the chocolate chips and toss to mix. Pour in the buttermilk all at once and stir with a wooden spoon until all the ingredients are moistened and a dough forms.
On a floured board, pat the dough into a circle that is 3/4 inch thick. Cut into 2 inch shapes with a biscuit cutter and place on baking sheet. Re-roll leftover dough and cut with biscuit cutter. Bake until well-risen and golden, about 13 minutes.
