These aren’t your grandmother’s poached eggs! Here is a recipe that I would like to share with you. The addition of minced lamb and cheddar makes this cloud egg not only flavorful but filling as well.

Cloud Egg with Minced Lamb and Cheddar
CLOUD EGG WITH MINCED LAMB AND CHEDDAR
Ingredients:
-1 raw egg, separated
-1/2 ounce of minced lamb, cooked
-1/2 ounce sharp cheddar
-salt and pepper for seasoning
Directions:
Preheat the oven to 350 degrees. Line a half sheet pan with foil and spray with oil. Pour the egg white into an electric mixer with a whisk attachment and season with salt and pepper (make sure your bowl is clean and dry). Whip until stiff peaks form. Scoop the whipped white onto your prepared pan in a big dollop. With the back of a spoon, make an indentation on the top of the dollop for the fillings and yolk. Bake for 8 minutes. Remove from the oven and sprinkle the minced lamb and cheddar into the indentation. Gently pour the yolk on top of the fillings. Place the egg back in the oven for about 3 minutes. Serve warm.
